Easter

This year for Easter, Brian and I stayed in Atlanta to spend the day with the Wages. Instead of attending Buckhead church, the family attended the first service of Gwinnett Church . It hasn't actually opened yet. Northpoint Community Church will start construction soon so for Easer Sunday the church was able to occupy the Gwinnett Arena.

After church we had a delicious meal with everyone's favorites all prepared by Miss Marie -she is an outstanding cook. I contributed a Broccoli Casserole, recipe compliments of "Tea Time at the Masters," a family tradition and favorite. Of course I made a few substitutions in attempts to make it a more nutritional side. I have to say the substitutions went well and it allowed me to have a second serving with a little less guilt. (Recipe with Substitutions Below) We had the special treat to share this special day with one of Chris' baseball teammates whose family lives in Washington and wasn't able to make it home due to their game schedule. We were happy to have an extra guest.
Sophie was invited too!

After we ate until our tummies were full, we relaxed and enjoyed the beautiful day. The boys took a little nap. Brian spent some quality time with Sophie so that she would feel included.

It was a wonderful Easter. Lets us all never forget the real reason and story of Easter. It is a story of:

RADICAL LOVE * AN UNFORGETABLE EVENT * AN EMPTY TOMB * A RISEN KING * ETERNAL LIFE WITH JESUS CHRIST OUR LORD

Here is the Broccoli Casserole Recipe for those of you know are interested. I have also listed what I substituted below.

2 (10 oz.) pkgs. frozen chopped broccoli
1 10¾ oz. can condensed cream of mushroom soup
1 c. mayonnaise
2 Tbsp. onion, grated
1 c. sharp cheese, grated
2 eggs, beaten
1-2 c. cheese cracker crumbs

Cook broccoli for 5 minutes. Drain; steam in colander 10 minutes.

Combine soup, mayonnaise, onion, cheese and eggs. Add broccoli. Put in greased 1½ quart casserole.

Top with crumbs and bake at 400° for 30 minutes.

*My substitutions:
98% Fat Free Cream of Mushroom Soup instead to the original
Greek Yogurt for the Mayo
2% Milk for the Sharp Cheddar Cheese
Whole Wheat Ritz for the crumb topping
