The other night for dinner Brian and I made an old favorite for dinner- Chicken Pineapple Pesto Pizza. When Hollie and I lived together in Post Gardens we made this at least monthly. This became a crowd pleaser when we both then moved into a house with Lauren, Meredith and Renee and became a staple when we all wanted to cook dinner together. Even though it is just me and Brian preparing and eating this dinner I could not help but reminisce the whole time. I cherish the years I had living with some of my best friends.
Okay, onto the pizza. I used a Pillsbury Pizza Thin Crust Normally I get the pre-prepared Boboli crust but thought we would switch it up. I am so glad that we did I thought this was great! It had a great crunch.
I layered the pizza dough on a greased cookie sheet, poked holes in several places with a fork and baked for about 6-7 minutes at 400'F.
Then I started loading it up with our toppings. Pesto, left over rotisserie chicken from a previous night’s dinner, diced fresh pineapple, red onions and mozzarella cheese. Then Brian and I customized each half to our liking. I added some diced spinach and Brian added some shredded cheddar cheese and feta cheese to his side.
We baked it for another 10 minutes and it was done.

We don't normally eat in front of the TV- we both think it is really important to have that time together at the table with no distractions. But we decided we could do a "dinner and a movie" type of night and eat while watching "The Fugitive" that we had DVR'd a few nights earlier. Is it good Brian??
